What we're tasting:
Roasted for a soft and tea like experience. Notes of plum and pear balance with a smooth sweetness of almond. Expect a light tart blackcurrant finish and delicious stone fruit acidity. This coffee is beautiful brewed slowly via drip, Moccamaster, V60 or similar filter style process.
During the 1860s when a group of French families set up plantations in the Malinal region they built the foundations for the coffee crops that exist today, with some plants dating back 100 years old. The cooperatives now guide over 300 hectares of land and 260 producers.
With crops growing from 1050m to 1150m ASL, the small batch producers from Nayarita have selected these Typica and Caturra varietals from a small group of farms that begun growing and producing coffee back in the 1800s, this region has now grown to 260 small farms that mainly consist of micro plots no bigger than 2-3 hectares of land. San Cristobal coffees says that "coffee in this area is very unique with citrus lemon like notes, and ranging into honey and chocolate." so this region can produce coffee for all tastes.
